TiNDLE PARMIGIANA

Serves 1 Portion

INGREDIENTS

  •  3 1⁄2 oz TiNDLE Thy
  •  11⁄2 oz Tomato Salsa Sauce
  • 11⁄2 oz mozzarella, shredded^
  • Breadcrumb mix
  • 1 egg^ (beaten)
  • All-purpose flour, as needed

Tomato Salsa Sauce

  •  12 1⁄4 oz canned tomatoes
  •  1 oz tomato paste
  •  1⁄2 oz tomato ketchup
  •  3⁄4 oz garlic, minced
  •  2 oz shallots, minced
  •  1 oz red wine
  •  < 1/8 oz salt
  •  1⁄4 oz mixed herbs, dried

Breadcrumb Mix

  •  1 1⁄2 oz panko crumbs
  •  1⁄4 oz parmesan powder^
  •  1⁄4 oz salt
  •  < 1/8 oz black pepper powder
  •  < 1/8 oz mixed herbs

PREPARATION

Is So Easy

  1. Preheat oven to 340°F
  2. Sweat garlic and shallots in a pot. Add canned tomatoes. Bring to a simmer.
  3. Combine remaining ingredients for Tomato Salsa Sauce and bring to a simmer for 30 minutes.
  4. Coat shaped TiNDLE Thy with all-purpose flour, dip in beaten egg and finally coat with breadcrumb mix.
  5. Deep fry TiNDLE Thy at 340°F for 1 1⁄2 minutes.
  6. Cover TiNDLE Thy with mozzarella cheese and bake in the oven at 340°F for 2 minutes.
  7. Spoon Tomato Salsa Sauce over and serve.
